Amaranth 'Polish'
50 days. This tall, heat-loving salad green is productive during the hot summer months when greens can be a challenge. Seedlings can be used as micro-greens. Breeder Frank Morton says there is a vocal contingent of salad growers who claim "Polish" is the best tasting variety of amaranth. approx. 200 seeds

21 days baby / 40 days full size. Traditional, spicy salad green provides that bitter component that stimulates digestion. Leaves are long and dark green and deeply cut. Very productive plants can be used for cut and come again harvests. approx. 200 seeds
Endive 'Nina'
50 days. Fine curled leaves create loft in salads. The taste is satisfyingly bitter and is essential in French mesclun mixes. Blanch the centres by tying heads with an elastic band to exclude sunlight. approx. 200 seeds
Epazote 'Glossy'
Aromatic plant is used in Mexican cooking and is a key ingredient in our home made chili powder. Can be used in small quantities in salad as well. Attracts beneficial insects to the garden, especially aphid-eating syrphids.. Pkt ~ 200 seeds.
Orach 'Golden'
28-45 days. An heirloom variety of this annual warm season salad green. Productive in the hottest days of summer and golden leaves can be used like spinach, raw or cooked. Cut young seedlings or pick individual leaves off young plants. Best eating quality comes from plants under 45 cm. Pkt: ~100 seeds
Orach 'Triple Purple'
28-45 days. Bright, purple leaves retain their colour even in the heat of summer. Add the savoyed, thick leaves to salads. The flavour is delicious and a little salty. Direct seed for best results. Pkt: ~100 seeds
Sorrel
Fresh, lemon flavoured greens on a perennial plant. Pick the 20 cm. leaves early in the spring and late in the fall. Use raw in salads and cooked in the classic French sorrel soup.
